Our approach
It is always with insatiable curiosity, thirsty for new knowledge, that we visit cocoa-producing countries. Each country has its specificities and a complete discovery can only be made by going there: meeting cocoa lovers, exploring the plantations that practice agroforestry, immersing ourselves in the heart of the cacao trees, marveling at the pods, delighting in fresh beans as sweet as tangy candies, selecting the cacao we prefer to create our own bar recipes.
Soon a Costa Rica origin bar?
Costa Rica is a very small producing country that takes great care to maintain the quality of the cacao it cultivates. A gem! The estates we visited, all respectful of biodiversity, also master fermentation and drying (despite particularly humid conditions), which promotes exceptional aromatic development of the cacao beans.
