Our Easter chocolate fish
Whether you like dark chocolate, milk chocolate, ivory white chocolate or praline, we offer you a delightful choice of our adorable chocolate fish, shellfish and crustaceans. Each piece is cast in a mold designed by the Maison with as much care as imagination.
Like our other creations, our Easter chocolate fish is made from our custom-made house couverture, developed by our chocolatiers. This unique blend is crafted with cocoa beans combining the acidity of Madagascar, the floral fragrance of Ecuador, the robustness of Haiti and the spicy aromas of Venezuela, carefully selected by us from cooperatives that share our values and standards. So, would you like another little chocolate fish?

Praline chocolate friture
Shall we share a secret? Our chocolates filled with praline chocolate, coated in dark chocolate or milk chocolate, are particularly dear to our gourmet hearts because praline is one of our specialties. Made by our chocolatiers from French hazelnuts, almonds, or even pistachios, roasted then caramelized before being cold-ground according to an ancestral and today very rare technique, our À la Mère de Famille praline is a real marvel not to be missed at Easter… or during the rest of the year!
Speaking of praline, do you know our Easter eggs in praline chocolate?
Why are these traditional Easter chocolates called "friture"?
Among the different Easter chocolate specialties, such as bunnies, hens, and Easter eggs, the sea-inspired chocolates hold a special place. Molded chocolates, turtles, fish, crustaceans, and shells are enjoyed at Easter in memory of an episode told in the Bible. After his resurrection, Jesus is said to have appeared by the Sea of Galilee: the fishermen, who had cast their nets there without success, then struggled to pull them up because they were so full. The name of friture kept by the chocolates commemorates the memory of this miraculous catch, and the traditional way these seafood products have always been prepared in the kitchen, that is, fried in oil.

Want to prepare your own recipe for chocolate fritures?
The passion of our artisan chocolatiers inspires you, and you want to try? Among chocolate lovers, we understand each other. You first need a food-grade mold with friture shapes (a set of molds, shells, fish, and other crustaceans) in which to pour your dark, milk, or white chocolate coating according to your preferences. Make sure to wipe your mold well, as it must be perfectly dry.
Break into large pieces one of our chocolate bars , with a more or less intense or creamy taste depending on the one you choose. First melt two-thirds in a saucepan over very low heat in a bain-marie, then add the last third, and let it melt while stirring gently. Scrape the edges with a spatula to ensure a uniform temperature in your mixture, around 30°C. Brush your molds with a brush so that the chocolate penetrates well into the shapes. Then fill each shape with melted chocolate, tap to remove air bubbles, and scrape off the excess chocolate. Refrigerate for 20 minutes, then unmold your chocolate by turning your mold upside down.
The result is not up to your expectations 😉? Come to one of our boutiques or our website where our lovingly crafted Easter fritures are waiting for you!
