The two institutions, united by the Dolfi family, have worked together – from the creation of the chocolate coating to the development of the recipe – to create a simple and indulgent tart with real character.
A cocoa shortcrust pastry and a pure chocolate ganache made from À la Mère de Famille's signature 65% chocolate coating make up this tart. The chocolate selected to create the recipe comes from a blend of several origins – Haiti, Ecuador, Madagascar, and Venezuela – revealing woody notes and yellow fruit aromas with a touch of honey.

From cocoa bean to chocolate tart
À la Mère de Famille's hallmark is the highly rigorous and direct selection of raw materials, which it processes itself in its factory. The beans, selected at the plantations and sourced directly, come from cooperatives that perfectly meet the Maison's requirements.
Stohrer's hallmark is the creation of the great classics of French pastry and the development of traditional recipes with authentic flavors. A culture of research and the creation of excellent products unique to the company is also hidden in the cakes, always made behind the historic boutique.
A historic indulgent marriage
Uniting the oldest pastry shop in Paris (1730) with the oldest chocolate shop in Paris, À la Mère de Famille (1761), was a dream! At the helm of a sweet kingdom whose specialties dot the map of France in the same way as the historic Maisons it has taken over, the Dolfi family has been proud to look after the Stohrer pastry shop since 2017.
This marriage is the meeting of two histories and a new chapter that has opened since then with the opening of joint boutiques and the creation of recipes that combine their sweet expertise.
