A cult dessert of our French confectionery heritage, the baba, invented at the beginning of the 18th century by
Nicolas Stohrer -pastry chef to King Louis XV- is now available in a jar. Generously soaked in an
amber rum syrup from the West Indies, these baba bouchons are appreciated for their fluffy and light texture,
as well as their balanced flavor.

NICOLAS STOHRER, PASTRY CHEF TO LOUIS XV
Born in 1706 in a small village in Alsace, Nicolas Stohrer apprenticed as a pastry chef
in Wissembourg in the kitchens of Stanislas Leszczynski (former King of Poland, Duke of Lorraine and father of
Marie Leszczynska, the future wife of Louis XV). He is the creator of the baba, a legendary recipe born
from a kouglof deemed too dry by Stanislas. He drizzled it with Malaga wine (rum came later)
then flavored it with saffron and added pastry cream with fresh grapes and raisins
from Corinth. King Stanislas was literally delighted by this new creation. The gourmand,
passionate about the tales of One Thousand and One Nights named this new cake "Ali Baba".
Still made by Stohrer, it is now surrounded by the traditional baba bouchons offered with or without whipped cream!
He is also credited with many other French pastry classics, such as the
puits d’amour and the bouchée à la reine.

THE OLDEST PASTRY SHOP IN PARIS, SINCE 1730
Founded nearly 300 years ago, the Maison Stohrer is the oldest pastry shop in the capital,
still in operation. Since then, it has worked behind its historic shop to create the
best of traditional French pastry.
It was right here that Nicolas Stohrer already offered his famous baba, which still makes the reputation of this institution today.
Faithful to tradition, the Dolfi family, at the head of the Maison, wishes to perpetuate the spirit of Stohrer
by relying on an exceptional heritage.

THE DOLFI CONFECTIONERY HERITAGE
Presiding over the destiny of Maison Stohrer since 2017, the Dolfi family ensures the succession and the
preservation of a unique confectionery kingdom in France. At the head of one of the most beautiful heritages
of chocolate making and pastry, they are driven by the deep desire to protect, keep alive the
taste of fine things, to promote authentic shops and recipes.

Thus, these baba bouchons will be available at À la Mère de Famille and Stohrer, as well as
throughout France in the Houses taken over by the family: on the Basque coast at Henriet, in
Touraine at La Chocolatière, passing through Nevers (Au Négus), Moulins (Les Palets d’Or),
Limoges (Buissière), Deauville (Au Duc de Morny) and Caen (Témoins).
