Ingrédients

  • 3 egg whites
  • 90 g sugar
  • 90 g powdered sugar
  • 240 g heavy cream
  • 170 g 70% dark chocolate
  • 25 g honey
  • 65 g butter

Matériel

  • Stand mixer
  • Bain-marie
  • Spatula
  • Sieve
  • Baking sheet
  • Parchment paper
  • Saucepan
  • Mixing bowl
  • Spoon

Préparation

  1. Prepare the meringue
In the bowl of a mixer, add the egg whites and sugar, then heat the bowl in a bain-marie until the mixture reaches approximately 45°C. Place the bowl on the mixer and whip the meringue at high speed. Once it has cooled and is well beaten, fold in the sifted icing sugar using a spatula.
  2. Make the meringue
Using a spoon, shape 20 meringues as desired on a baking sheet lined with parchment paper. Bake these meringue shells in a preheated meringue oven at 100°C for 4 hours.
  3. Filling
In a saucepan, heat the cream and honey until just simmering. Chop the chocolate into a bowl and pour the hot cream over it. Stir gently with a spatula to thoroughly blend the ganache. When it reaches 35°C, add the softened butter.
  4. Assembly
Leave aside for 2 hours at room temperature before assembling. Glue two meringue shells together with the filling. Store away from moisture.
