The return to school season is shaping up to be praline-filled!

Praliné? That’s our specialty!

It is made in our workshop from carefully selected sugar and nuts: almonds, hazelnuts, pistachios, walnuts, sesame seeds… and now pine nuts, making their debut in our homemade recipes!

But do you know how we make praliné?

The nuts are first roasted, then mixed with caramel and left to cool into large sheets.

Once broken up with a hammer, the pieces are passed through a mill consisting of two large century-old granite rollers that crush the blocks into a paste.

This creates a praliné ready for our master chocolatier to work with. He has just developed a brand-new, deliciously indulgent recipe: Siberian pine nut praliné, coated in either our signature 65% dark chocolate or signature 36% milk chocolate.

This new creation is available as chocolate candies and bars featuring deliciously caramelized pine nuts.

You can find this new creation in all our boutiques or on our online shop.

The return from the holidays has never been so sweet!
