- Preparing the chocolate
Melt the chocolate coating, which comes in guns, in the melting tank.
Tab the chocolate on the marble to lower the temperature of the coating.
Then reheat the chocolate until it reaches its working temperature. The temperatures are not the same for white chocolate or milk chocolate.
- Preparing the Easter mold
When the chocolate has reached its working temperature, pour it over the entire surface of the mold.
First, gun the molds to add contrast and enhance the shine of the Easter figures.
Tap the mold lightly to prevent air bubbles, then turn the mold over to remove the excess chocolate.
Leave the chocolate to rest so that it sets.
Once the chocolate has crystallized, trim the edges of the mold, then repeat the first operation to create the second layer of the mold.
Create the eyes and details by hand using a piping bag.
- Assembling the chocolate mold
Unmold the shells, then assemble them.
Fill the Easter figures with Easter candies before sealing them with a ribbon.
Once ribboned, the Easter figures are ready to be sent to the shop.
