At À la Mère de Famille, we offer a whole menagerie of molded chocolates and great classics Easter after Easter. From ducks to big bears and traditional eggs and bells, all our pieces are made by hand with patience and care.
Whether it is the tempering of the chocolate, its crystallization in the mold, or the creation of the details, nothing is left to chance to make our molded chocolates as beautiful as they are delicious.
Our chocolatiers create nearly 100 different designs: hens, roosters, ducklings, chicks, lobsters, fish, sardines, scallops, rabbits, cats, dogs, marmots, bears, cows, squirrels, turtles, owls… in different shapes and sizes.
All these molded chocolates receive exceptional attention, such as the hand-painting of the eyes and the spraying of the thousands of pieces that leave our workshop. The secret to their shine lies in this preliminary work on each mold. Without exception, they are all sprayed. This step involves spraying delicate layers of chocolate into the mold before pouring in our homemade chocolate coating. It adds contrast and shine to our large collection.
Only after this step is the chocolate, liquid and at the right temperature, poured in and takes the shape of the mold, layer by layer. It sometimes takes up to four layers of chocolate to achieve the desired thickness!
Unmolded with gloves and great care, they are then filled—all of them—with dry and praline sprinkles, then beautifully wrapped by agile and skilled hands. And there you have it!
