Paris’s oldest chocolate shop is unveiling a brand-new chocolate bonbon for the start of the new season that you might almost be tempted to wear. Inspired by the precious antique jewel featuring a bas-relief profile, the cameo has been reimagined by À la Mère de Famille to be engraved among the House’s great classics.

Unprecedented, the À la Mère de Famille cameo is steeped in history.
Within the archives preserved by À la Mère de Famille, it was the original crest discovered in the historic shop that inspired the creation of the cameo. Designed as an elegant jewel in its velvet case featuring gold-hot-stamped Art Nouveau décor, this chocolate bonbon is available in two new recipes: pure-origin Haiti ganache 75% and French hazelnut praline – Guérande fleur de sel.
A tribute to the making of praline, a House expertise.
The hazelnut praline cameo – Guérande fleur de sel, nestled beneath its milk chocolate coating, is a true tribute to praline, a House specialty.
Made from carefully selected French hazelnuts and brown sugar, this new hazelnut praline is enhanced with fleur de sel from the salt marshes of Guérande. Roasting, caramelization, cold grinding to achieve a coarse texture… All these steps are carried out by hand in the House’s workshop with precision and expertise so that the fruit expresses its finest aromas.
From the selection of beans to the making of the cameo…
The pure-origin Haiti ganache cameo is the embodiment of a tradition dear to the House: mastering every stage of making its chocolates to guarantee their consistency.
It is to ensure this that the House works, among other things, in collaboration with a cooperative in Haiti. The harvesting of the beans, the drying, the creation of fermentation boxes with French wood, the fermentation temperature and its duration… Everything has been defined to obtain an exceptional cocoa bean with a very distinctive aromatic profile, in order to reveal all its flavors when transformed into chocolate: fruity notes, a cocoa character, and a subtle bitterness.
Heading to Haiti!
To guarantee consistency and constant quality, we master every stage of making our chocolates. It is to ensure this that we have been working since 2012 in close collaboration with the Dame-Marie cooperative in Haiti.
